Frittata Recipe

Eggs are a great source of protein. By combining them with a range of vegetables and serving them with a side salad, a frittata is a great lunch or light dinner option and is packed full of nutrients to optimise health.

Try using different vegetables and spices if you want to create your own version!


1 tbsp olive oil

1 red onion

10 cherry tomatoes

1 courgette

100g frozen peas


Black pepper

6 eggs

Side salad


Serves 4



Dice the onions, halve the tomatoes and cut the courgette into thin strips.

Preheat the grill.

Heat the oil in a large frying pan.

Add the vegetables and the frozen peas to the pan with a little salt and pepper and stir well.

Beat the eggs in a large bowl.

Pour the eggs over the vegetables in the pan and leave to cook for approx 4/5 minutes.

Put the pan under the grill for 2 minutes until the top is cooked.

Slice into four and serve with a side salad.
