Around The World - Seville, Spain


Hi, my name is Louise, I am living in Seville, Spain. We are in a state of emergency and can only go outside for necessities: groceries and medications. We are not allowed to leave the house except for the reasons listed above and if you are a key worker.

It has been a month since the strict lockdown began, 11 March 2020, and it does not look like it is going to be over anytime soon. 

Times have been hard and challenging. Life in lockdown has become normal and I’m grateful to have my health, my job, my partner and cooking.

I decided to take this time to learn how to cook dishes I have wanted to learn for a while and write them in my new recipe book. A favourite of mine that I’ve learnt so far is Greek Spinach and Feta filo pies known as Spanakopita in Greek.

Greek food is one of my favourite cuisines in the world, so taking this time to learn a few dishes has been wonderful.

You will need: 

  • Filo pastry (store-bought is fine)
  • 300g Spinach
  • 100g Feta Cheese 
  • 1 Egg
  • ½ a small white onion
  • A pinch of Nutmeg 
  • Salt and pepper for taste
  • Olive oil

Wash and drain the spinach, then remove the stalks. Shred or tear the spinach into small pieces.  Dice onion finely. Add 1tbsp of olive oil to a frying pan, when warm add the diced onion. Fry until translucent, not brown. Once translucent, add the spinach, little by little and cook until it wilts. Once the spinach and onion mixture is ready, set aside.

In a bowl, add 100g of feta cheese, mash it with a fork to make sure there are no large lumps.  Add the egg, a pinch of nutmeg and salt and pepper for taste then mix this all up. Then add the spinach and egg and mix until it all combines.  Preheat the oven to 180°/ gas mark 4. Roll out 2 sheets of filo pastry and lightly brush with olive oil. Cut strips about 7cm wide. Add a small amount of the filling at the top and fold over from the corner to make a triangle shape. Continue folding over until you have a small triangle. Seal with olive oil. Repeat until your entire filling has gone. Place on a baking tray and put into the preheated oven for approximately, 25 minutes or until golden brown and crispy.
