Pumpkin Puree Muffins

2 tbsp chia seeds
5 tbsp water
300g pumpkin purée
120ml maple syrup
1 tbsp honey
Pinch of salt
2 tsp cinnamon
60ml melted coconut oil
70ml water
360g oats
Dried cranberries and pumpkin seeds

Stir the chia seeds in a cup with the water and soak for 10 minutes.
Meanwhile, preheat the oven to 200C and line a muffin tray.
Mix the chia seeds with the pumpkin puree, honey, maple syrup, salt and cinnamon.
Add to a food processor and blitz with the melted coconut oil.
Add 70ml water and mix again.
Put the oats in a bowl, add the pumpkin mixture and mix well until everything is combined.
Pour the mixture into the muffin tin and add some cranberries and pumpkin seeds.
Bake until golden, approx 40 minutes. (If you insert a knife in the middle of a muffin, it should come out clean)

Leave to cool for at least 30 minutes, drizzle each muffin with 2.5ml of Omegabiocell369KIDS.
